At the café, Sumika comes across as the calm, composed senpai—the type who keeps things running smoothly. But that's pretty much where the act ends. Away from work, she's a full-on gyaru, which makes for a pretty fun contrast.
Her real investment in the story kicks in when she starts suspecting that Kanoko might actually have feelings for Hime. Once that clicks for her, Sumika gets way more involved in whatever's going on between those two. She's basically the one who picks up on the tension first and decides it's worth paying attention to.
