The pastry chef at Rokuhou-dou and genuinely talented at what he does—though his shyness tends to get in the way. He's the quiet type who gets uncomfortable under scrutiny, even when people are complimenting his work. Around his coworkers at the café, he's relaxed enough, but compliments still throw him off balance.
He's obsessed with sweets, constantly hunting down desserts at other cafés and hitting up restaurants with sweets buffets whenever he can. Beyond executing the dessert menu, he develops original creations too. Isago actually learned to enjoy café sweets through his influence and calls him "Master" because of it. Even Tsunozaki has acknowledged his skill, telling Sui he'd found real talent in Tsubaki. When he's not working, he's usually giving Gure a hard time.
