Paulette is a woman with long rose hair and green eyes. She wears a long-sleeved white shirt and blue pants which are cropped to reveal purple platform shoes. She wears a black Bistro Montmart apron over her clothes, tied in the front and a notebook can be seen in her pocket.
The only daughter of Victor, proprietor of the Old Town diner, Montmart. She warms any space she enters like an angel, or as the regulars see her, the "diva of the diner." She manages the multi-tenant building the diner is situated in and allows Van to operate his business from it, despite being aware of the unique circumstances of his job. She had another job before, but left it six years ago to return to her home with her daughter, Yumé.
Paulette started working at the bistro because her mother wasn't around and she loved her father's cooking.
