Rias is genuinely kind and optimistic with her peerage and loved ones, but she has a fierce temper when anyone disrespects her or her people. She's proud of her family name, though she hates being reduced to "the Crimson-Haired Ruin Princess" or just another Gremory heir. Moving to the human world freed her from that—people saw her as Rias, not a title. That freedom mattered enough that she'd pretty much written off romance, since every guy who showed interest was chasing her bloodline instead of her. Until Issei, anyway. He's the exception, and she makes sure everyone knows it.
She gets openly jealous when other girls are around him, swinging from her usual composure to almost a different person. Despite her mature appearance, she acts her actual age and gets frustrated seeing girls flirt with him. She loves teasing both Issei and Asia, but makes it crystal clear that Issei is hers. The Gremory family just loves hard—it's kind of their thing—and Rias is no exception. She's unbothered with casual intimacy around him (she's said she can't sleep without being nude or without him nearby), but when it comes to actual romance, she's still innocent underneath the seductive exterior.
Once they got together officially, she loosened up considerably. She stopped being angry about his whole harem dream and even helps manage the other girls who are into him. The others call her the "Legal Wife" at this point. She still gets a little jealous if he's not spending enough time with her, and she apparently develops this instinctive rush to get to him if she senses him with an unknown woman. It's a real burden being in that position—Ravel's pointed out that managing everyone's feelings is honestly harder than what Issei deals with.
Her older brother Sirzechs is basically her hero, even though he's insufferable about his sister complex. She looked up to him her whole childhood and still deeply respects him, though she used to feel inferior too.
Rias is obsessed with Rating Games and dreams of becoming champion. She's genuinely talented—Azazel thinks she could hit Ultimate-class just on raw ability—but she compares herself to the other Rookies Four and feels weaker. Riser and Azazel have both noted that her real gift is finding people with potential and building them into something greater, which is exactly what happened with Issei and her whole peerage. She hates losing, especially after that first loss to Riser. It drives her.
She's competitive to the point of stubbornness, but also kind of impatient and self-centered thanks to being spoiled rotten by her dad and older brother. Her mom and sister-in-law constantly call her out for spending money like it grows on trees. There's also this weird thing where she developed an actual phobia of camels as a kid after one kicked her when she was making fun of it—it's serious enough that the Gremory territory actively keeps camels away from her, which is ironic considering her family's whole association with them.
She's weirdly obsessed with Japan too. Souji Okita got her into it, and now she buys random Japanese souvenirs constantly and gets giddy visiting places like Kyoto. Though apparently she pouted like crazy at the train station when she couldn't explore everything she wanted.
