He's naturally timid, but his curiosity about the ingredients he discovers on their hunts pushes him to be brave—and honestly, his cooking skills are what make him invaluable out there.
He's seriously talented. He can handle delicate work like safely extracting poison from a puffer-whale, and he has an almost intuitive sense for which foods complement each other. More impressively, he can cook something incredible from basically anything handed to him. He's also weirdly good at spotting edible organisms in unfamiliar environments, which has saved their runs more than once.
His reputation speaks for itself: Toriko thinks his abilities exceed five-star level, Coco was genuinely shocked to learn his skill is probably world-class, and Sani—who's obsessed with "harmony" in food—is fascinated by the way Komatsu achieves it.
