Apachai is the Muay Thai master at Ryozanpaku and goes by the nickname "Shinigami"—the grim reaper—for obvious reasons. He's trained in Muay Boran as well, though he only practices it at night to preserve the tradition. He's deliberately kept it hidden from Kenichi because, frankly, it's way too dangerous.
Here's the thing about Apachai: he's genuinely sweet with kids and animals, has an oddly specific gift for communicating with them, and has a pretty childlike personality overall. But put him in a fight and he completely loses the ability to dial it down. He'll nearly kill Kenichi without meaning to because striking with lethal force isn't a choice for him—it's pure reflex. He's been doing life-or-death ring matches since childhood, so that's just how his body responds. There was even an incident where Kenichi needed CPR after getting hit and going into cardiac arrest. It bothered Apachai that Kenichi became afraid to train with him, so he eventually worked on holding back, though he still tends to knock the guy out whenever he gets serious.
He idolized an older fighter named Agaard Jum Sai. The language barrier probably doesn't help either—Apachai struggles with Japanese and possibly languages in general, which may explain why he doesn't always absorb people telling him to ease up.
You'll notice he says "Apa" constantly, sometimes yelling "Apapapapa" mid-fight. Also, if you call his phone, don't be surprised when he answers with "We have your child hostage" instead of a normal greeting. That's a callback to some dark stuff in his past involving trafficking operations.
He's a massive eater too, especially of hamburgers. He'll demolish entire plates and isn't above stealing from Sakaki's stash. That habit traces back to when his old boss would confiscate his meals as punishment whenever Apachai broke his training equipment.
