Sover trained extensively in music and performance from a young age, studying piano and singing before joining both the Maîtrise de Paris and Maîtrise de Radio France—prestigious children's choirs that had him representing France internationally. He rounded out his education with theater training at the Municipal Conservatory in Paris's 8th arrondissement, film study at the Maison du Geste et de l'Image, and advanced acting work through the Actor Studio and Meisner technique courses.
His on-screen career took off with appearances across French television. He's best known for a seven-year recurring role on the hit series Julie Lescaut, playing the boyfriend of the lead character's daughter, alongside parts in Madame le Proviseur and Le Lycée. He also appeared in various summer TV dramas like Le Grand Batre, Le Bal des célibataires, and Méditerranée.
In 2000–2001, he led the series Music'Art, which later won best access prime time program at a 2003 festival. That same year brought him the Young Talent prize at Paris Festival for his performance in Les Âmes Câlines. Between 2003 and 2008, he hosted KD2A, a program that regularly won awards at festivals like Luchon, and he co-hosted special events including the Telethon Symphonic Show and Sidaction. He also starred opposite singer Priscilla in the series Chante!, playing the antagonist Johan.
More recent work includes the 2015 international film Train Station, which won best film awards in Los Angeles, Miami, and Kosovo, and a lead role in the 2016 English-language series Billion to One.
